almond layer cake

I've been on the look out for a suitable almond cake recipe to be part of my wedding cake in a few weeks time. After a few wrong turns I discovered this beauty. It's ridiculously easy to make, has the firmness you need to stand up to fondant icing but isn't too heavy at all. Also with the alcohol syrup you have an added richness which is exactly want you want from a celebration cake. This version is based on Dan Lepard's yummy cake which you can find here. I have boosted the almond flavours by substituting the vanilla extract with almond and using amaretto instead of brandy for the syrup. I've also done a version using Krupnik, a Polish vodka and honey based liquer. That was pretty awesome too. My version here is also much lighter because I haven't slathered it with double cream as in the original. I'm sure it would be glorious with the cream but I didn't have any in the house and I wanted to make it just a little lighter. If you want to be more decadent go for it and layer the cake together with fresh raspberries or strawberries and some lightly whipped and sweetened double cream. 


Ingredients
225g caster sugar (+25g for syrup)
125g unsalted butter, softened
250g mascarpone
170g greek yogurt
4 medium eggs
2 tsp almond extract
75g ground almonds
325g plain flour
3 tsp baking powder
Brandy/amaretto/krupnik
Good quality Strawberry jam or conserve
  1. Grease and base line two 18cm round sponge tins with baking parchment and heat the oven to 180C.  Beat together the caster sugar, butter and 125g mascarpone with an electric mixer until it is light and fluffy - this will take around 3-5 minutes.
  2. Next add the eggs one at a time beating to ensure they are thoroughly combined.
  3. Beat in the almond extract and ground almonds, sift in the flour and baking powder, and combine thoroughly.
  4. Divide the mixture between the two tins then bake for about 30 minutes, or until completely cooked (a skewer will come out cleanly when it is).
  5. While the cakes are cooling heat 25ml of your chosen spirit with 25g caster sugar until the sugar dissolves then remove from the heat. Prick the tops of the cakes with a fork or skewer then carefully pour over the syrup. Cover the cakes with paper and leave to cool completely. This will help to keep them soft.
  6. Put one layer of the cake on a serving plate. Cover with a generous couple of dollops of good quality strawberry conserve/jam then beat together the greek yogurt and remaining mascarpone, adding a little sugar if you wish. Put half the mascarpone mixture on top of the jam then cover with the second cake layer before finally putting the remaining mascarpone mix on top. Yum.

chorizo, mascarpone and tomato pasta sauce



A tasty, kitchen cupboard meal. These ingredients are usually knocking around in my kitchen or there will be something that I can substitute. To make a vegetarian version of this dish at stage one, saute a finely diced onion in some olive oil, add a tablespoon of hot smoked paprika and a couple of cloves of crushed garlic then continue on with the rest of the recipe. You can either keep the sauce chunky or put it through a food processor before mixing with the pasta.



Serves 2-3
Ingredients
200g cooking chorizo
400g tinned tomatoes or passata
2 tbsp mascarpone cheese or creme fraiche or similar
1/2 tsp fennel seeds
sprinkle of dried chilli flakes (optional)
salt & pepper
200g dried pasta. I used pappardelle.

  1. Heat a wide frying pan over a medium heat, squidge the sausage meat or of their casings directly into the pan so that you've got bite-sized pieces. Cook for around 3-4 minutes until crispy and golden and the spicy paprika oils have been released. Don't move around too much unless you want to it break down into much smaller pieces. You can drain the oil off if you wish but it seems a shame to loose so much of the flavour.
  2. Add the fennel and chilli flakes and sizzle for a minute. 
  3. Add the tomatoes to the pan and simmer the ingredients together for about 5 minutes before you put the pasta on, it should be starting to reduce by this stage. If the tomatoes are whole you will need to break them up a bit with the back of your spoon.
  4. Cook your chosen pasta according to the packet instructions, mine took around 10 minutes.
  5. The tomato sauce is ready once it is no longer watery and has thickened up and is glistening with little pools of oil. Season to taste.
  6. When the pasta is nearly ready stir the mascarpone into the tomato sauce and mix thoroughly. 
  7. Once cooked, add in the pasta. If the sauce is too thick for your taste, add a little of the cooking water to thin it out.  Serve and enjoy.

lemon poppy seed cupcakes



This is a classic combination of flavours with a hidden surprise. If you are feeling the need to be a little more healthy they are equally delicious with or without frosting. If poppy seeds aren't your thing you can leave them out if you really must.

The cake batter recipe is based on Dan Lepard's Sour Cream Butter Cake in his book Short and Sweet but has been adapted quite a lot.

Ingredients
175g unsalted butter, softened
225g caster sugar
3 medium eggs
200g sour cream (I used 0% fat greek yogurt and it still worked perfectly well)
200g plain flour
3tsp baking powder
Zest of a lemon
1 tsp lemon extract
10g poppy seeds (optional)
Lemon curd (approx 4 tbsps)


  1. Preheat your oven to 180C/160C Fan/350F/Gas 4 and place 12 muffin cases in the tray.
  2. Cream together the butter and sugar until light and fluffy then add the eggs in one at a time, beating thoroughly after each addition.
  3. Beat in the sour cream or yogurt then add the lemon zest, extract and poppy seeds.
  4. Sift in the flour and baking powder and beat in until all the mixture is combined.
  5. Next place a spoonful of the batter into each case, it should come about a third of the way up the case.
  6. Smooth the batter out so that the bottom of the base is completely covered. Now place a teaspoon of lemon curd in the centre of each case.
  7. Add a couple of more spoons of batter to each case so that they are full almost to the top but not quite.
  8. Place in the oven and bake for around 20 minutes or until a skewer comes out cleanly.
  9. Allow the cupcakes to cook completely before frosting then decorate however you choose. I opted for a simple mascarpone frosting with a little more lemon rind to continue the zingy flavour throughout.
